Description of content: Technical regulations containing a report and technical provisions on matured cheese and the specifications therefor, covering consultation rules, definitions, classification, feedstock and other materials, general, sensorial, chemical and microbiological characteristics, food additives, sampling, testing and analysis methods, packaging and labelling, storage and transport, and conformity with other standards. 7. Objective and rationale: To regulate the requisite characteristics and technical specifications of matured cheese, so that they may be reflected in the processing of this product, for the sake of safe consumption. 8.
