Description
REQUEST FOR INFORMATION ON RETAIL FOOD SERVICES General The following statement of work includes descriptions of both the services and deliverables required and the food service facilities which are available to provide those deliverables and services. Objectives for Foodservice The contractor should provide a food service program that meets or exceeds the following expectations: •· Full service cafeteria, offering a convenient way to obtain meals and snacks, which encourages USMMA staff to stay in-house. •· Catering services that are typically associated with a college or university (e.g. for official USMMA functions, alumni events, and private parties). •· Menu to be a wide variety of hot and cold foods, including a full array of all types of foods: grilled, baked, fried, raw (fruit and vegetable/salads) •· Menu to incorporate healthful food choices •· Contractor to provide well-trained employees to prepare and serve menu items •· Clean and sanitary facilities •· Comfortable and pleasant dining environment •· Ability to take out any menu item from the cafeteria •· Reasonable prices (competitive with nearby establishments) General Description of Food Services The contractor shall establish and operate in the food service facilities for the purpose of dispensing food, nonalcoholic and alcoholic beverages, and such other items as may be authorized by the USMMA COR in accordance with the terms and conditions of this contract. The type of food services falls into two general categories, which will be described in further detail later in this document: •· Retail or Cafeteria Services for employees, students, and visitors. •· Catering services that are typically associated with a college or university (e.g. for official USMMA functions, alumni events, and private parties). Operating Hours Cafeteria services will be provided 5 days per week, Monday through Friday (except for holidays observed by the Federal Government), minimum operating hours are as follows: Breakfast 7:00 am to 10:00 am Snack Bar 6:30 am to 3:30 pm Lunch 11:30 am to 2:30 pm Dinner (Optional, as requested by contractor) Catering services will be provided as required, 7 days per week, and may include holidays observed by the Federal Government. Comments are due back to USDOT by May 21, 2012.
