Description
THIS IS A SOURCES SOUGHT ANNOUNCEMENT, FOR INFORMATIONAL PURPOSES ONLY. The United States Navy is seeking a Boilerless Combination (Steam & Convection) Oven with the following desired features: 1.Computer / Microprocessor Controlled Cooking process An oven that can pre-heat, cook, shut off, alarm when finished, and clean with minimal manpower. The oven needs to have the ability to auto upload recipes to automatically roast, bake, grill, oven fry, steam, and finish all foods without the end-user having to know how long, how hot, etc. to cook the food.2.Menu Upload CapabilityHave the ability to electronically update, change and lock in excess of 200 multi-step cooking programs.3.Rack MonitoringProvide cooking times for each rack loaded for progressive cookery.4.Intuitive Control PanelSelf-explanatory touch screen and built-in help functions.5.Equal or Greater Cooking SpeedEqual or surpass the current cooking speed of existing combination ovens.6.Equal or Greater Rack CapacityEqual or surpass the current rack capacity of existing configuration.7.Refresh ModeThe oven must have the ability to reheat and moisturize advanced cooked foods back to original preparation quality.8.Sensor Controlled cabinet HumidityAbility to adjust based on cooking requirement (i.e. oven frying, roasting, braising meat, etc.)9.ReliabilityHave historical reliability data in an institutional feeding environment.10.Self CleaningHave a self cleaning mode to perform periodic cleaning with minimal manpower requirements.11.Component AccessibilityOven components must be accessible from the front of the unit, either by sliding rails or drawers.12.Self Diagnostics an MonitoringRequired service notice display, as well as the ability to give a technical readout of anything that may be internally wrong with the system. Provides basic troubleshooting/fixes that may be able to be performed by ships force. Provides electronic reports for distance support troubleshooting by a technical representative.13.HAACP Data Memory OutputOutput via USB interface. Allows maintainers/inspectors the ability to see history of oven maintenance, cleaning, wear and tear, etc.14.Maintenance NotificationAlerts the user for preventive maintenance needs.15.HatchabilityThe oven must be able to fit through a 26 X 66 Navy hatch.16.Internal Fan BreakCeases oven operation whenever the oven door is open to prevent steam and/or heat releasing from the oven and so the oven does not continue to cook while the door is open.17.Dual Pane Front WindowEasy cleaning and maintain safe outer cabinet temperatures.18.Handle Locking MechanismRequired to be turned in both directions before the door will open, so that steam has a chance to escape prior to opening.19.Door Open LatchHolds the door open so that it is not swinging back and forth if the ship lists.20.AvailabilityOven should be available 6-8 weeks after order. The proposed oven must also meet the requirements delineated in the following documents:1.Commercial Item Description - A-A-59713A, Combination Oven, Electric2.Standard Specification for Combination Oven Electric or Gas Fired ASTM F 1495-05 Companies are requested to provide information describing their product and their ability to provide the required item. NSWCCD requests your responses no later than 9 June 2008. Information should be e-mailed to Mr. James Brechka at james.brechka@navy.mil. Information will be treated as Business Sensitive and will not be shared outside of Government activities and agencies without the permission of the provider. All information shall be provided free of charge to the Government. NSWCCD may request further information regarding the capabilities of respondents to meet the requirements and may request a presentation and/or a site visit as deemed necessary. At no cost to the Government, the Government may request minor clarifications of a companys submission. No contracts will be awarded as the result of this notice.
