Description

This is a draft specification provided by the requiring activity: The tenderizer shall be made completely of high-grade stainless steel. The knifes must be made of special knife-steal, vacuum hardened and electro-polished. The edge must be hand-made sharpened on both sides. This is necessary in order to prevent any damages of the meat when moving into the meat and to allow a clear view of t he cuts. The edge is especially designed for meat with skin. The upper knife-roller shall be able to be driven up and down. The distance-gap between both of the knife-rollers shall be continuously adjustable. The knife-rollers can be adjusted and removed without tools over sliding bushes. Ability to tenderize small pieces of meat with a weight of about 25-40 grams, without these pieces getting caught in the knife rollers. The stripper shall allow that the upper surface of the schnitzels is tenderized exactly and no tearing arises in the run-out of both knife-rollers. The gear motor of the drive must have 2 speeds.
