- Description
- Texture analysis system + software, probes, and accessories. It is widely used in food industry for testing breads, doughs, tortillas, cakes, cookies, and pasta. This is necessary to compare results to previous research. Must have the ability to quantify textural properties such as hardness, softness, adhesiveness, spreadability, dough inflation, tackiness, springback, relaxation, compressibility, coherence, resilence, extensibility, and fracturability. Ability to change instrument probes to accommodate a wide range of food items, gels, films, and adhesives. Ability to be controlled through windows based software. 5kg capacity with 0.1g sensitivity. Incorporation of a dough inflation system. Incorporation of a dough and gluten extensibility rig. Incorporation of a dough stickiness fixture. Incorporation of a tortilla rollability fixture. Max force: +/- 5kg with an accuracy of 0.025%, speed accuracy of 0.1%, 0-40 C operating range, data rate 500Hz or faster.
